In 2021, this delightful White Blend hails from Alentejo, Portugal. In 1983, professional ballet dancer Joao Afonso got a book on winemaking from his wife. From then on, his mind was hooked on wine, leaving pirouettes behind. In 2009, upon discovering century - old vineyards at the base of the Serra de Sao Mamede, the agritourism estate of Cabecas do Reguengo was established. Instead of uprooting all the vines, they are being restored by grafting new ones to replace unproductive ones. Mixing different vine varieties in traditional square formations creates a unique microclimate, influenced by the sun, rain, soil, and wind. The vineyards are surrounded by olive tree groves and native fruit trees, well - adapted to Alentejo's hot, dry summers. There are vegetable gardens on the property, and sheep and chickens roam freely, creating a biodiverse and harmonious organic growing environment. This blend of native grapes is carefully hand - harvested from small, centuries - old plots. It undergoes natural fermentation and is aged for 12 months in very old, large oak casks. Unfined and unfiltered, it truly expresses the terroir of Serra de Sao Mamede. It has a honeyed character with flavors of baked pears and apples. The finish has notes of orange, chamomile, and a touch of creaminess, making it a perfect match for clams in a cream sauce.
How to Use: Simply chill this white wine blend to around 45 - 50°F (7 - 10°C) before serving. Pour it into a white wine glass and take your time to savor its unique flavors. Best paired with clams in a cream sauce, but it can also go well with other seafood or light cheese dishes. Note: Since it's unfined and unfiltered, you might see a little sediment at the bottom of the bottle. That's normal and doesn't affect the taste. Maintenance: Store the unopened bottle in a cool, dark place, ideally with a consistent temperature. Once opened, keep it in the fridge and consume within 2 - 3 days for the best flavor.
