Mayacamas winery, nestled in the Mayacamas Mountains between Sonoma and Napa Valleys, has a rich history. It was founded in 1889 by a German immigrant who sold wine in barrels to San - Francisco bottlers. In the 20th century, it changed hands among several families, and in July 2013, Charles Banks, his wife Ali, along with Jay Schottenstein and his son Joey, became its new owners. Andy Erickson is in charge of winemaking. Mayacamas is famous for its excellent Cabernet Sauvignon and a well - liked Chardonnay. Every three years or so, we can access some of their library wines. After getting engaged in October 2019 at Italics, we visited the tasting room in downtown Napa. Tasting the 2003, 2005, 2008, and 2015 Cabernets, we were amazed by the differences. The 2004 Cabernet has been on our top - try list. It's from a cool vintage, more Bordeaux - like, and has greater aging potential than the 2003 and 2005 wines. It's just starting to be drinkable now, but it'll be at its best in 2029 if you can wait.
To enjoy this 2004 Mayacamas Cabernet Sauvignon, first, let it breathe for about 30 minutes to an hour before drinking. This will help release its full flavors. When you pour it, use a proper wine glass to enhance the aroma and taste. As for storage, keep it in a cool, dark place with a relatively stable temperature. Avoid exposing it to direct sunlight or extreme temperature changes. If you're planning to age it further, just remember it's already showing good potential but will reach its peak in 2029.
