Champagne Jacquesson 'Degorgement Tardif' - Cuvee 739

This exquisite champagne is crafted from 57% Chardonnay, 21% Pinot Noir, and 22% Meunier, all sourced from Premier Cru and Grand Cru vineyards. The individual grape varieties are aged separately for eight long years in large oak barrels. In 2011, the weather was quite a mix. Winter was extremely cold and wet, spring was warm and dry with a bit of frost. Summer started gloomy but ended on a pleasant note. This unique climate led to the production of wines that are fine, harmonious, and perfectly balanced. After 96 months on the lees under cork, in June 2020, 14,574 bottles and 711 magnums were late - disgorged. It has a dosage of just 0.75 g/l, offering a light and refined taste.

To enjoy this champagne, first, chill it in the fridge for a few hours. Aim for a temperature between 7 - 10°C. When you're ready to open it, hold the bottle at a 45 - degree angle and slowly twist the cork. Don't shake the bottle as it may cause a big fizz explosion. Pour it gently into a champagne flute to keep the bubbles. As for storage, keep it in a cool, dark place. Avoid direct sunlight and sudden temperature changes. If you have some left over, seal the bottle with a champagne stopper and put it back in the fridge. It should stay good for a day or two.
