Renardat-Fache - Bugey-Cerdon

This wine is crafted from 70% Gamay and 30% Poulsard grapes. The organically-certified fruit is carefully hand-picked, then pressed and cold-fermented in vats until it reaches around 6% alcohol. After a gentle filtration that keeps most of the active yeast in the unfinished wine, it's bottled to continue fermenting. It finishes with an alcohol content of about 7.5 - 8% and a good amount of residual sugar. Bottled annually in December, it has incredibly bright acidity and fine bubbles that beautifully balance the sweetness. It's lively, juicy, and easy to drink, perfect for pairing with both salty and sweet dishes.

To enjoy this wine, simply chill it in the refrigerator for a couple of hours before serving. When opening, be gentle as there is some carbonation. It's best served in a champagne flute to appreciate the fine bubbles. You can pair it with a variety of foods, like cheese platters, desserts, or even some savory snacks. Keep the unopened bottles in a cool, dark place. Once opened, try to finish it within a day or two to maintain its freshness and flavor.
